IDEAL FOR MEAT AND FISH DISHES

 

Ingredients (to be dosed in proportion to the quantity of butter used):
butter
lemon
garlic
chives
parsley
tarragon
edible violets
white pepper
salt

 

Preparation:
Soften the butter in a water bath, once melted, whip it with a whisk or with a planetary mixer to incorporate air and add all the ingredients. Attention to the consistency which must not be too hard since it must be circular. Wrap it with plastic wrap, close it to “candy” and let it rest in the refrigerator.
